Gluconal GDL

Glucono-Delta-Lactone (GDL) is a natural constituent of various foods, found in honey, fruit juices, wine and other fermented products.

GDL is an inner ester of gluconic acid and classified as a carbohydrate. It is a white crystalline powder with an initial sweet taste and a slight acidic aftertaste. Although GDL is not an acid, in aqueous solution, it slowly hydrolyzes to an equilibrium mixture of gluconic acid and it's delta and gamma lactones. At room temperature (25°C/77°F) complete hydrolysis occurs in approximately two hours, with rates increasing by temperature growth. Slow-release acidification and mild flavor characteristics make GDL unique among food acids, allowing usage in special applications that require a controlled decrease in pH and/or a neutral flavor.

In processed foods, GDL functions as a curing, pickling; leavening and pH control agent, as well as a sequestrant. GDL is used effectively in a variety of food processing applications, such as: "direct set" cheese production, tofu manufacture, chemical leavened baking, meat processing, also salads, dressings, fruit and vegetable processing.

Glucono-delta-lactone is listed by the Food and Drug Administration (FDA) as GRAS and permitted in food without limitation other than good manufacturing practice (CFR 184.1318). In the European Union, GDL is listed as a generally permitted food additive (E575) and may be added to all foods, following the "quantum satis" principle as long as no special regulation restricts its usage. The Food and Drug administration (FDA) has approved PURAC's GDL as an all-natural ingredient, the only one in the world.
