It’s natural presence in dairy products, combined with the dairy flavour and good anti-microbial action of Purac natural lactic acid, makes it the preferred acidification agent for many dairy products.

Lactic acid is an acidulant in delicately flavoured soft drinks and fruit juices, thanks to it’s mild acid taste.

Lactic acid based acidulants are also used to formulate salads and dressings, which results in products with a milder flavour while maintaining microbial stability and safety.

Lactic acid is also used in the formulation of brine to prevent the spoilage of preserved olives, gherkins, pearl onions and other vegetables. The stability of the brine is ensured and the taste is improved.

Formulating hard-boiled candy, fruit gums and other confectionery products with liquid lactic acid results in a mild taste and low inversion levels. Lactic acid powder is used for acid sanding.

Purac lactic acid and powder are used for direct acidification in the production of sourdough. Lactic acid is a natural sourdough acid, which gives bread it’s characteristic flavour.
